'Drunken Master Paul is back making food for the Metal Jesus Crew: Salmon Smart Buns - finger food designed to make you smarter! Smart Buns Recipe Ingredients Salmon Avocado 8 grain rolls and/or Pretzel rolls Old Bay Seasoning salt Brain Pesto Brain Pesto one bag Trader Joes Kale chips one bag Trader Joes dried broccolli one garlic clove 3/4 cup walnuts 3/4 cup pistachio meats olive oil pinch of salt to taste Put all ingredients into food processor and pulse a few times Add about 1/4 cup of olive oil and pulse a few more times to mix. drizzle more olive oil until you get a good consistency Put in bowl for later. It\'s good to let this sit for at least 30 minutes for all the flavors to mix Cut salmon down into roughly 1/2 in thick slices then using cookie cutter, punch out salmon medallions Slice avocado into 1/4 inch thick slices and put on plate for assembly station Using the same cookie cutter as a guide, cut holes in top of buns being careful not to go all the way through. Then slide the knife in sideways about 1/2 inch from the bottom of the bun and cut away the bread \"plug\". Lift out plug, cut away bottom part until you are left with about a 1/2 in ch thick top. Optional: Lightly toast in oven Place on cookie sheet and get ready to assemble. Put some more olive oil in a medium hot non stick skillet. Dust salmon medallions With Old Bay and place in pan. Cook 2-3 minutes per side. Remove from pan and place on plate for assembly station. Assembly Place one salmon medallion in a bun. Top with avocado and a pinch of salt, then cover with pesto. Then place bun lid on top. Repeat until all buns are filled. Serve while gaming and feel yourself getting smarter.
