Asian Chicken and Orzo Salad Ingredients 1/2 cup vegetable oil 1 medium diced red bell pepper 3 chopped green onions 3 cups cooked and diced chicken 1 cup drained and chopped water chestnuts 1 (16 oz) package cooked and drained orzo 1 (9 oz) package frozen sugar snap peas 3 tablespoons rice wine vinegar 2 tablespoons soy sauce 2 teaspoons hoisin sauce 1 (2 oz) package (1/2 cup) toasted slivered almonds Directions 1. Cook sugar snap peas according to package directions; drain well. 2. In a large bowl, combine sugar snap peas, orzo, water chestnuts, chicken, green onion, and red bell pepper. 3. In a small bowl, whisk together oil, vinegar, soy sauce, and hoisin sauce. 4. Pour over orzo mixture, tossing gently to coat. Stir in toasted almonds.
