'In this podcast, Paula talks about fried chicken and some of her secrets her mom passed along to Paula for the BEST fried chicken. There is an art to fried chicken and here are some of Paula\'s secrets. One of the easiest ways to get great fried chicken is to start with a small chicken that is about 2.5 lb chicken. A small chicken is more flavorful and easier to fry. If you are going to have fried chicken for dinner, cut up your chicken in the morning and season it and then put it back in the fridge. This will let the chicken suck up the seasonings. An hour before frying, take the chicken out of the fridge to come up to room temperature. This will make sure the chicken isn\'t soggy. For batter, mix eggs and Louisiana hot sauce along with a 1/4 of water. Let your chicken soak in the batter for 30 seconds to up to 30 minutes. You can also let it soak in the fridge in the batter for a couple of hours. Make sure you preheat oil to 350 degrees using a thermometer. Use peanut oil if possible and fill your dutch oven or fryer 3/4 full. Peanut oil has a high resistance to burning so it can fry chicken very effectively. When you are ready to go, remove the chicken from the batter and roll in flour. Paula adds pepper to her flour as Michael like pepper chicken. Add your dark pieces first because they take the longest to cook and then add in white pieces which won\'t take as long. Dark piece cook for 14 minutes and white pieces for 12 minutes. Add all the chicken together and they will fry better all together. Adjust cooking time based on the size of your chicken. Enjoy with your family!'
