'Season 3, Episode 18 (Season Finale) Ham Steak & Scalloped Potatoes Recipe by Aric Adiego & Josie Wakelee Active Time: 15 minutes Inactive Time: 60+ minutes Ham Steak ---------------------------- 1 ham steak 1/4 cup honey 1/4 cup brown sugar 2 tsp cayenne pepper 2 tsp paprika 2 tsp onion powder 2 tsp garlic salt 1. In a small pot, combine honey, brown sugar, cayenne pepper, paprika, onion powder, and garlic salt. Bring to a light simmer and set aside. 2. Heat a cast iron skillet over medium heat. 3. Cook ham steak for 2 minutes per side. 4. Let cool 5 minutes before slicing and glazing. Scalloped Potatoes ---------------------------- 2 potatoes 4 cups milk 2 cups cheddar cheese, shredded 2 Tbsp butter 2 Tbsp flour 1 clove garlic, minced 1. Pre-heat oven to 375° F. 2. In a small pot, saute garlic in butter until slightly browned. 3. Slowly add flour while stirring and cook for 2 minutes. 4. Add milk to the pot and bring to a simmer. 5. Once simmering, reduce heat and slowly add in 1 ½ cups cheese a handful at a time allowing the prior batch to melt before adding the next batch. 6. Season cheese sauce with salt and pepper to taste and set aside. 7. Using a knife or mandolin slice potatoes into ⅛” slices. 8. In a buttered baking dish, layer potato slices and cheese sauce in the baking dish. 9. Top with remaining cheese and bake for 60 minutes or until the potatoes are tender. 10. Allow to cool 10 to 15 minutes before serving.
