'In Paula\'s latest book, she makes a new variation on chowder - Chicken Corn Chowder.  Ingredients 4 TBSP - Butter 1 3/4 lbs of Boneless, Skinless Chicken Breasts - cubed 1/2 TSP of Salt 1/2 TSP of Black Pepper 1 Cup Minced Red Bell Pepper 1/2 Cup Green Onion 3 Cups Frozen Diced Hash Brown Potatoes Thawed 10 Oz Whole Kernel Corn 1/4 Cup All Purpose Flour 6 Cups of Chicken Broth 1 Cup of Sour Cream  Preparation 1. Melt 2TSP butter in large dutch oven at medium high heat 2. Sautee Chicken Breasts in butter 3. Sprinkle Salt and Pepper over chicken as it cooks. 4. Cook Chicken for 5 minutes stirring occasionally 5. Remove chicken and set aside 6. Melt remaining 2 TBSP of butter 7. Sautee Red Pepper, Green Onions and Corn until soft. 8. Mix in Flour 9. Pour in Chicken Broth 10. Add Back Chicken 11. Bring soup to a boil 12. After the soup is at a boil, reduce heat and simmer, stirring occasionally for 15 - 20 minutes until the soup has thickened. 13. Stir in Sour Cream 14. Garnish with Green Onion and serve and enjoy!'
