
'#DesayunoMexicano #MexicanBreakfast Easy Mexican Breakfast you can make at home. Chilaquiles in a red sauce that doesn’t lack flavor with your desired heat. Nopales (cacti) with potatoes and eggs that are surely to keep you full until lunch time. These are some of my favorite mexican breakfast to make at home when I have some extra time on my hands. Chilaquiles Rojos : - 4 Roma Tomatoes - 6 Tomatillos - Small piece of onion - More onion thinly sliced - 2 Garlic Cloves - 2 Chiles Serranos - 4 Chiles de Arbol (more to liking) - 1/4 TBSP chicken boullion - Salt to taste - 8 Tortillas, 4 per person. (Or however many you’d like) - Queso Fresco Roast tomatoes, tomatillos, onion, serrano, chile de árbol, garlic. Once they are roasted start taking them out. Place everything in blender. Blend until smooth. Cut your tortillas in triangles. On medium high heat fry them for about 3-5 minutes. They should look a light golden color. When they’re done put them on a plate with some paper towels to soak up some of the oil. In different pan add some oil, sauté thinly sliced onion. Add your sauce. Add chicken bouillon, taste for salt. Add in your tortilla chips and evenly coat them in the chilaquiles sauce. Plate, add plenty of quest fresco, add more thinly sliced onions if desired. Serve with fried eggs, perfect mexican breakfast! Nopales with papa and egg (huevo) - 1 Cup Nopales - 2 Small/Medium Red Potatoes - 2 Eggs - 2 Roma Tomatoes - 2 Tomatillos - Small amount of Onion - 2 Garlic Cloves - 2 Chiles Serrano - 2 Chiles de Arbol - Cilantro, Small Handful - Garlic salt Cut potatoes into small cubes. Boil tomatoes, chile serrano, garlic cloves, and tomatillos. (Do not over cook the tomatillos they can make your sauce bitter, just look for the color to change a bit yellow.) While you’re waiting for the tomatoes and chiles to boil add oil to another pan, add in your potatoes. Season with garlic salt. In a different pan make your scrambled eggs, Season with salt. When done set aside. When your tomatoes are done boiling add it to blender with the tomatillos, garlic, chile de arbor, chile serrano, and some of the water that you boiled it in. When the potatoes have softened add your garlic salt and thinly sliced onion. Sauté until translucent. Add your sauce. Add your cilantro, season with salt. Add in your nopales, and your egg. Mix together. Let everything combine for about 5 minutes on medium low heat. *Make sure you boil the gooeyness out of your nopales.
